Coconut Chia Pudding

This not-too-sweet chia pudding is loaded with Omega-3s. Chia seeds lend ALA (a plant-based form of Omega-3 that converts to DHA and EPA at low amounts), and thanks to our Omega-3 powder you'll also get your daily dose of DHA and EPA. Make sure to add the Omega-3 powder just before serving for best taste and absorption.

Ingredients:

  • 1 packet (per serving) of Needed's Omega-3 tailored for a mama-to-be
  • 1/3 cup chia seeds
  • 1 tablespoon maca powder (feel free to omit if you don't have this on hand)
  • 2 cups coconut milk
  • 1 tablespoon maple syrup
  • 1/4 cup almond butter

 Directions:

  1. Mix all of the ingredients into a bowl until blended, and refrigerate for at least 30 minutes to thicken.
  2. Add one packet of Omega-3 powder to each serving (just before serving!), and top with a sprinkle of toasted coconut and crushed almonds.
  3. Grab a spoon and dig in!
